Rhubarb, chipotle pepper compote

My wife made one of the most beautiful compote I ever had. It's sweet and spicy. Savory.

In our pan, she cooked chopped rhubarb. Adding some sugar, she also added in some chipotle (the one in the can?) as well as some vanilla.

Season it with more sugar depending on your preference.

Serve with ricotta on toast.

She doesn't eat meat, but I can imagine it would be quite fantastic on pork chops or duck!
