Morel relleno
No joke, I have weird food dreams.
So I recently discovered Chile relleno. Perfect food. Amazing. Poems should be written for it. Tears should be shed for it.
Spring will be approaching, and we should have morels popping up then. When I was in Pennsylvania, I was obsessed with hunting for morels with my best friend. Then, when I started dating my wife, my best friend gave me her blessing to take her to our morel spot for a date. There's different species of morels. With my BFF, we found the small tiny grey morels and the large yellow morels.
Now in my dream, I imagined I had a basket of comically large yellow morels. I made slits in the cap part of the morel. I stuffed it with queso. Dipped it in the meringue. Fried it.
Now the sauce I served with it was white. Just a simple cream-sauce with a copious amount of chopped up ramps.
Here's the weird part - I put chopped up golden raisins into the sauce. A tiny bit of sweetness to break through the fat and creaminess.
I hope one day I can go back to that morel spot.
