Dried persimmon and whipped blue-cheese crostini
So I tried to dry persimmons (took six weeks!) and it turned out terrible! I think my apartment was too dry. But while I was drying them, this was the recipe I had in mind. Guava paste with blue cheese on a cracker is a thing, so this was my homage to that snack.
My idea was that you slice the baguette thinly; pan-fry it with butter! Whip cream cheese and blue cheese together. Slice the dried persimmon. Spread the whipped blue cheese on the baguette and add the dried persimmon.
Sweet and salty. Pungent. Wonderful.
